Marsala Woodpigeon Breast in Rice

Ingredients

Serves 2

  • 4 Woodpigeon breasts
  • 1 cup of rice
  • 1lb Mushrooms
  • 1 Medium sized onion
  • 3 tablespoons of butter
  • 1/2 Teaspoon of handrubbed rosemary
  • Lemon juice, salt, pepper to taste
  • Marsala wine

Method

  1. Begin with a saute of 1 cup of *uncooked* rice in 3 tablespoons of margarine or butter.
  2. Use medium heat and cook until rice is light brown in color.
  3. Place rice in bottom of casserole dish.
  4. Place Woodpigeon breasts on the rice bed, sprinkle with lemon juice, salt and pepper.
  5. Sprinkle the handrubbed rosemary over the woodpigeon and rice.
  6. Chop the mushrooms and onion and surround the woodpigeon breasts with them.
  7. Pour 1 cup of Marsala wine over the woodpigeon breasts and rice.
  8. Cover the casserole dish and bake at 350 degrees Fahrenheit for 30 minutes, or until rice is fluffy and breasts are tender.
