Marsala Woodpigeon Breast in Rice
Ingredients
Serves 2
- 4 Woodpigeon breasts
- 1 cup of rice
- 1lb Mushrooms
- 1 Medium sized onion
- 3 tablespoons of butter
- 1/2 Teaspoon of handrubbed rosemary
- Lemon juice, salt, pepper to taste
- Marsala wine
Method
- Begin with a saute of 1 cup of *uncooked* rice in 3 tablespoons of margarine or butter.
- Use medium heat and cook until rice is light brown in color.
- Place rice in bottom of casserole dish.
- Place Woodpigeon breasts on the rice bed, sprinkle with lemon juice, salt and pepper.
- Sprinkle the handrubbed rosemary over the woodpigeon and rice.
- Chop the mushrooms and onion and surround the woodpigeon breasts with them.
- Pour 1 cup of Marsala wine over the woodpigeon breasts and rice.
- Cover the casserole dish and bake at 350 degrees Fahrenheit for 30 minutes, or until rice is fluffy and breasts are tender.
